The nixtamalization of corn is tribal chemistry at its finest.  Etymologically, nixtamal is "ash dough".  The idea is that by cooking dried dent corn in an alkaline solution, you turn it from toxic cardboard into food.

Hollandaise Sauce is one of the mother sauces of classic French cuisine. These “mother” sauces are so named because from the base sauce hundreds of variations can be created. In the case of hollandaise, some of the classics are sauce bearnaise, sauce charon, and sauce maltaise.

Sometime in Italian history (around the 14th century) a chef thought, “Everyone puts all this great stuff on pasta. I wonder what would happen if I put great stuff IN pasta?” Hence, the ravioli was born.

Not coincidentally, many of the best dishes produced by this style involve the sort of cuts discarded by wealthier meat buyers. While the gentry paid a premium for the loins and legs of lamb, for instance, the shoulders and shanks we left to the poor.

As a young chef, I became accustomed to to scooping chicken, or beef, “base” out of a jar when the time came to make soup. This product is not dissimilar to the foil-wrapped, die-sized, bullion cubes found in every 1970’s kitchen. It’s just not as dry.

Pumpkin varieties range from super monsters (bred for competitive size queens), jack-o-lantern types, oil seed hull less, to the object of our concern, the sugar pie pumpkin.

The goat’s head thorn is one tough plant.  Initially, I hated it.  Every time one kneels down on this earth, five of these demonic seeds perform random acupuncture on your knee.  Set down a shovel and the handle is studded with them when you pick it up.

Unlike toast, the splitEnglish muffin had its crust underneath.  This prevents butter and other gooey or sticky toppings from escaping through the bread and messing up your fingers.

This pâté is perfect for a first adventure into higher organ uses.  It happens on the stovetop, and the ratios are quite forgiving.  As long as you get close, and hit the reduction consistency, you'll have a winner.
